  • 2 teaspoons baking powder

  • 4 large organic eggs
  • 1 1/2 cup milk
  • 1 1/3 cup fresh ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated lemon zest (use microplane grater)
  • 2 tablespoons unsalted butter – melted
