Ingredients

  • The Fish:
  • Two whole black bass, or similar fish, weighing about 2 pounds each (see Note)
  • 6-8 large sprigs each of oregano, parsley and thyme (enough to get the amount of leaves needed for the salmoriglio below)
  • 8 bay leaves
  • 4 cloves garlic, lightly crushed
  • 1 lemon, sliced into 1/4-inch rings
  • 1 red onion, sliced into 1/4-inch rings
  • Salt and pepper to taste
  • Olive oil to coat pan and for drizzling ( 1/4 to 1/2 cup)
  • The Salmoriglio:
  • 2 tablespoons loosely packed fresh thyme leaves
  • 2 tablespoons loosely packed fresh oregano leaves
  • 1/2 cup loosely packed parsley leaves
  • 1 clove garlic, mashed to a paste (see Note)
  • 1/2 cup extra virgin olive oil
  • Zest of 1/2 lemon
  • 2 tablespoons lemon juice
