  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs, beaten
  • 1 1/4 cups low-fat buttermilk
  • 3 T grapeseed or canola oil
  • 1 1/2 tsp. vanilla
  • 1 apple, peeled and cut into very small dice (1/4 inch or less)
  • 1/2 cup chopped walnuts (preferably toasted before chopping
