  • 1 english cucumber, thinly sliced into rounds
  • 1 red bell pepper, julliened
  • 12 lettuce leaves (about 4-5 inches in length)
  • 2 cups purple Cabbage, sliced thin
  • 36 mint leaves
  • ¼ cup cashews, chopped
