  • 1 t better than bouillon chicken base
  • 1 cup rinsed black beans
  • 5 mini red/yellow/orange peppers
  • 1/4 cup cilantro
  • 2 T red wine vinegar
  • 1 lime juiced
  • 2 t garlic minced
  • 1/4 t cumin
  • Cook rinsed quinoa in 1 cup water with bouillon bringing to a boil then simmering for 15 min(on about 5 on my electric stove) Add everything together chill and serve.
