Ingredients

  • 1 bigger batch of my healthy pie crust, pre-baked
  • 4 medium bananas (2 and ½ sliced in ¼ inch rounds to cover the crust, the rest goes into the filling)
  • ¾ cup (185g) plain coconut yogurt (or yogurt of choice)
  • 2 teaspoon matcha powder
  • 1 and ½ cup (265g) cooked chickpeas
  • 3 tablespoons (40g) erythritol, xylitol or another granulated sweetener (or stevia to taste)
  • 1 teaspoon lemon juice
  • ½ teaspoon vanilla extract (I used my homemade one)
