Ingredients

  • 6-9 bacon slices
  • 1 small yellow onion (i use vidialia onions)
  • 1 cup chopped green onion (top & bottom)
  • Parsley
  • 1 (12 oz) can of tomato paste
  • 1 can of diced petite tomatoes drained
  • 3 1/2 cups chicken broth
  • 3 tsp sugar
  • 1/2 teaspoon cayenne pepper (less or more depending on where u live, ha!)
  • Salt
  • Pepper
  • 2 cups rice ( i use zatarains rice, its not mushy and doesnt stick. zatarians rice is the pride of louisiana).
  • You can also add fresh shrimp, cajun style or smoked sausage to this recipe. if u do so, add 1/2 pkg sausage (sliced) or 1 -1 1/2 lbs of shrimp.. my friend sometimes adds white meat chicken to hers as well..
